Born in New Delhi, India, Jolly discovered his passion for cooking at a very young age by watching and learning from the local street cafe chefs ‘dhabas’ (which are the heart of true Indian cuisine). This hands on, real world approach inspired Jolly to learn and experiment with unique ingredients and fresh Indian spice combinations. In India, cuisine changes every 100 km, and this gives Jolly a unique approach to cooking. After completing school in India, Jolly travelled throughout Europe in order to experience life outside of India, and to expand his knowledge of cooking, restaurants, and hospitality management. Jolly took up positions in many prestigious, up-scale restaurants and hotels in Austria, catering to celebrity figures and successful business clientele on a regular basis. He also worked on a Walt Disney cruise ship for some time. It was there on the ocean liner where he quickly learned how to cope with the fast paced western style restaurant business. In 1996, Jolly and his wife (Rajani) decided to move to Vancouver, British Columbia, Canada in order to start a new and exciting life with dreams of running their own restaurant.
